Ingredients

4 zucchini
150 g ham
200 ml heavy cream or crème fraîche
1 tsp salt
1 tsp freshly ground black pepper
50 g grated Parmesan cheese (optional)

Instructions

Bring a large pot of salted water to a boil. Add the sliced zucchini and cook for 3–5 minutes until tender but still slightly crisp.
Meanwhile, heat a non-stick skillet over medium heat and cook the diced ham for 6–8 minutes until lightly crispy.
Reduce the heat to low and stir in the cream. Season with salt and pepper, then simmer for 2–3 minutes.
Drain the zucchini and gently fold them into the creamy ham sauce. Stir well to coat evenly.
Serve immediately topped with grated Parmesan cheese if desired.

Notes

Choose young, firm zucchini for the best texture.
Replace the ham with smoked tofu for a vegetarian version.
Use light cream for a lower-fat option.
