Creamy veggie orzo packed with broccoli, carrots, garlic, and parmesan for an easy and comforting family-friendly dinner recipe.
2 tablespoons olive oil
1 cup broccoli, chopped
1 cup carrots, finely shredded
2 teaspoons garlic, minced
1 cup orzo
2 cups chicken broth
1 oz cream cheese
1/2 cup parmesan cheese
Chop the broccoli into small florets and finely shred the carrots.
Heat olive oil in a medium pot over medium heat.
Add the broccoli, carrots, and minced garlic. Sauté for about 5 minutes until softened and fragrant.
Stir in the orzo and chicken broth.
Bring the mixture to a boil, then reduce to medium-high heat and cook for 10–15 minutes, stirring occasionally to prevent sticking.
Continue cooking until the orzo is tender and most of the broth has been absorbed. Add extra broth if needed.
Stir in the cream cheese and parmesan cheese until fully melted and creamy.
Let cool slightly before serving.
You can substitute vegetable broth for a vegetarian version.
Add cooked chicken, salmon, or tofu for extra protein.
Finely chopping the vegetables makes this recipe toddler-friendly.
Leftovers can be stored in the refrigerator for up to 3 days.
