Ingredients

10 slices crusty bread or baguette (½-inch thick)
1 pound ripe tomatoes, diced
3 tablespoons extra virgin olive oil
2 tablespoons balsamic vinegar
2 cloves garlic
15 fresh basil leaves, chopped
1 teaspoon salt
¼ teaspoon black pepper

Instructions

Rinse and dry the tomatoes, then dice them into small pieces. Remove excess liquid if needed.
In a bowl, combine tomatoes, olive oil, balsamic vinegar, 1 grated garlic clove, salt, pepper, and chopped basil.
Mix well and let sit at room temperature for 10–15 minutes to develop flavor.
Slice the bread and place on a baking sheet. Toast under a broiler or grill until golden and crisp.
While warm, rub each slice with the remaining garlic clove.
Spoon the tomato mixture over the toasted bread.
Serve immediately and enjoy.

Notes

Use fresh, ripe tomatoes for the best flavor.
Letting the mixture rest enhances the taste.
