Ingredients

1 cup unsalted butter, softened
1 cup brown sugar, packed
1/2 cup granulated sugar
2 large eggs
1 tsp vanilla extract
2 1/2 cups all-purpose flour
1 tsp baking soda
1/2 tsp salt
1 cup graham cracker crumbs
1 cup chocolate chips
1 cup mini marshmallows
Extra chocolate chips and marshmallows, for topping

Instructions

Preheat oven to 350°F (175°C). Line or grease a 9×13-inch baking pan.
In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
Beat in eggs one at a time, then mix in vanilla extract.
In a separate bowl, whisk flour, baking soda, and salt.
Gradually mix dry ingredients into the wet mixture until just combined.
Fold in graham cracker crumbs and chocolate chips.
Press half of the dough evenly into the baking pan.
Sprinkle mini marshmallows over the layer.
Spread remaining dough over marshmallows, covering as best as possible.
Top with extra chocolate chips and marshmallows.
Bake for 25–30 minutes until golden brown and set.
Cool in pan for 10 minutes, then transfer to a rack to cool completely before slicing.

Notes

Slight underbaking keeps the bars extra gooey.
Let bars cool fully before cutting for clean slices.
Add a pinch of sea salt on top for a sweet-salty balance.
