Rotel Dip is a creamy, cheesy classic made with seasoned beef, melted cheese, and tomatoes with green chiles. Perfect for parties, game day, or easy snacking.
1 tbsp olive oil
1 lb ground beef
1 yellow onion, diced
1 (2 lb) block processed cheese (such as Velveeta), cubed
2 (10 oz) cans diced tomatoes and green chiles (such as Rotel)
1/2 tsp chipotle chile powder
Fresh cilantro, chopped (optional, for garnish)
Heat olive oil in a large skillet over medium heat.
Add ground beef and diced onion. Cook for 6–8 minutes, breaking up the meat, until browned and fully cooked. Drain excess fat.
Reduce heat to low. Add cubed processed cheese, diced tomatoes with green chiles, and chipotle chile powder.
Stir continuously until the cheese is fully melted and the dip is smooth and creamy (about 2–3 minutes).
Garnish with fresh cilantro if desired and serve warm with tortilla chips.
For extra spice, add jalapeños or hot sauce.
Swap ground beef for sausage for a different flavor twist.
Keep warm in a slow cooker for parties.
