Ingredients

10.5 ounce cream of chicken soup with herbs
1 cup sour cream
1 tablespoon Italian seasoning
3 cups cooked chicken (shredded or diced)
2 sleeves Ritz crackers, crushed
1/2 cup butter, melted

Instructions

Preheat oven to 350°F (175°C) and lightly grease a 2-quart (8-inch) baking dish.
In a large bowl, mix together cream of chicken soup, sour cream, and Italian seasoning until well combined.
Stir in the cooked chicken until evenly coated.
Transfer the mixture into the prepared baking dish and spread evenly.
Sprinkle crushed Ritz crackers over the top.
Drizzle melted butter evenly over the cracker topping.
Bake uncovered for 25–30 minutes, until the top is golden brown and the casserole is hot and bubbly.
Let cool slightly before serving.

Notes

Rotisserie chicken works great for convenience and added flavor.
Do not overbake to keep the casserole creamy.
Add vegetables like broccoli or peas for extra nutrition.
For extra crunch, reserve some crackers to add halfway through baking.
