Ingredients

1 fresh pineapple
1/4 cup butter, melted
1/4 cup dark brown sugar
1/4 cup dark rum (optional)
1 tsp ground cinnamon
Pinch of salt

Instructions

Cut off the top and bottom of the pineapple, then remove the rind.
Slice into 3/4–1 inch rings or spears. Remove the core if using rings.
Place pineapple pieces in a zip-top bag.
In a bowl, whisk melted butter, brown sugar, rum (if using), cinnamon, and salt.
Pour mixture into the bag and gently toss to coat.
Marinate in the fridge for 20–30 minutes.
Preheat grill or grill pan to medium-high heat (375–400°F).
Grill pineapple for 4–6 minutes per side, brushing with leftover marinade while cooking.
Remove and serve immediately.

Notes

Marinating helps deepen flavor and caramelization.
Use a hot, well-oiled grill to prevent sticking.
Can be served with ice cream, whipped cream, or yogurt.
Rum is optional but adds a rich depth of flavor.
Best enjoyed fresh off the grill.
