The best garlic butter steak bites with crispy potatoes recipe, an easy skillet dinner with tender beef, buttery garlic sauce, and perfectly crispy roasted potatoes.
4 tablespoons unsalted butter, divided
1 pound baby potatoes (1–1½ inches), halved
1/2 teaspoon onion powder
1 teaspoon kosher salt, divided
1/4 teaspoon freshly ground black pepper
1 1/2 pounds boneless sirloin steak (1-inch-thick), cut into 1-inch cubes
4 cloves garlic, minced
1/2 teaspoon fresh thyme leaves, coarsely chopped
2 tablespoons fresh parsley, chopped (optional)
Preheat oven to 325°F (165°C).
In a large oven-safe or cast iron skillet, melt 2 tablespoons butter over medium-high heat.
Add baby potatoes, onion powder, 1/4 teaspoon salt, and pepper. Toss to coat.
Arrange potatoes cut-side down and cook undisturbed for 1–2 minutes until browned.
Continue cooking for about 4 minutes, stirring occasionally, until lightly softened and golden.
Transfer potatoes to a baking sheet and spread in a single layer. Place in oven.
Wipe skillet clean and melt 1 tablespoon butter over medium-high heat.
Add steak cubes in a single layer, season with remaining salt, and sear 4–5 minutes, flipping until browned and just cooked.
Lower heat to low. Add remaining 1 tablespoon butter, garlic, and thyme. Stir until fragrant.
Remove potatoes from oven and add them back into the skillet. Toss everything together.
Garnish with parsley if desired and serve hot.
Use a cast iron skillet for the best sear on both steak and potatoes.
Don’t overcrowd the pan when cooking steak to ensure proper browning.
You can adjust garlic amount depending on preference.
