This Easy Pineapple Chicken Rice Bowl combines juicy chicken, sweet pineapple, and fluffy rice in a quick and flavorful meal. Perfect for busy weeknights and family dinners.
For the Chicken
1 pound boneless, skinless chicken breast, cut into bite-sized pieces
1 tablespoon olive oil
1 teaspoon garlic powder
½ teaspoon paprika
½ teaspoon salt
¼ teaspoon black pepper
For the Bowl
3 cups cooked jasmine rice
2 cups pineapple chunks (fresh or canned, drained)
1 red bell pepper, diced
1 cup broccoli florets
2 green onions, sliced
1 tablespoon sesame seeds (optional)
For the Sauce
¼ cup low-sodium soy sauce
2 tablespoons honey
1 tablespoon pineapple juice
1 tablespoon rice vinegar
1 teaspoon minced garlic
1 teaspoon cornstarch
2 tablespoons water
Cook the Chicken
Season the chicken with garlic powder, paprika, salt, and black pepper.
Heat olive oil in a large skillet over medium-high heat.
Add the chicken and cook for 6–8 minutes until golden and cooked through.
Remove from the skillet and set aside.
Cook the Vegetables
In the same skillet, add the broccoli and bell pepper.
Cook for 3–4 minutes until slightly tender but still crisp.
Add the pineapple chunks and cook for 1 minute.
Make the Sauce
