Ingredients

For the Chicken
2 lbs boneless, skinless chicken thighs or breasts
2 tablespoons olive oil
1 teaspoon salt
½ teaspoon black pepper
For the Chipotle Honey Marinade
3 tablespoons honey
2 chipotle peppers in adobo sauce, finely chopped
1 tablespoon adobo sauce
3 cloves garlic, minced
2 tablespoons lime juice
1 teaspoon smoked paprika
½ teaspoon ground cumin
1 tablespoon soy sauce
Optional Garnish
Fresh cilantro, chopped
Lime wedges
Sliced green onions

Instructions

In a bowl, whisk together honey, chipotle peppers, adobo sauce, garlic, lime juice, smoked paprika, cumin, and soy sauce.
Pat the chicken dry and season with salt and pepper.
Place the chicken in a large bowl or zip-top bag and pour the marinade over it.
Marinate for at least 30 minutes, preferably 2–4 hours in the refrigerator.
Remove chicken from the marinade and discard any excess marinade.
Grill Method
Preheat grill to medium-high heat (400°F/200°C).
Grill chicken for 5–7 minutes per side, or until the internal temperature reaches 165°F (74°C).
Let rest for 5 minutes before serving.
Oven Method
Preheat oven to 400°F (200°C).
Place chicken in a lightly greased baking dish.
Bake for 22–28 minutes, depending on thickness, until fully cooked.
Broil for 2–3 minutes for caramelized edges if desired.
Stovetop Method
Heat olive oil in a large skillet over medium-high heat.
Cook chicken for 5–6 minutes per side until golden brown and cooked through.

Notes

Chicken thighs provide the juiciest results.
Adjust the number of chipotle peppers for more or less heat.
Reserve a small portion of the marinade before adding raw chicken if you’d like extra sauce for serving.
