Cheesy Potato Burritos loaded with crispy tater tots, seasoned beef, and melted cheese. A hearty and satisfying meal perfect for quick dinners.
3 cups frozen tater tots
1 lb ground beef
2 tbsp taco seasoning
4 large flour tortillas (burrito size)
1 1/2 cups shredded cheddar cheese
1 cup nacho cheese sauce (plus extra for dipping)
1/2 cup sour cream
Salt and pepper (to taste)
Bake the tater tots:
Preheat oven to 425°F (220°C). Spread tater tots on a baking sheet and bake for 20–25 minutes until crispy, flipping halfway.
Cook the beef:
In a skillet over medium-high heat, cook ground beef until browned. Drain excess grease, then add taco seasoning and a splash of water. Stir well.
Warm tortillas:
Heat tortillas in a skillet for about 30 seconds per side or microwave briefly until soft and pliable.
Assemble burritos:
Spread nacho cheese sauce down the center
Add seasoned beef, crispy tater tots, cheddar cheese, and sour cream
Keep fillings centered for easy wrapping
Wrap:
Fold in the sides, then roll tightly from the bottom up.
Serve:
Cut in half and serve immediately with extra nacho cheese sauce for dipping.
Bake tater tots until crispy to avoid soggy burritos.
Don’t overfill tortillas or they may tear.
Warm tortillas before assembling for easier rolling.
