A delicious baked yogurt dish made with Greek yogurt, eggs, maple syrup, and fresh berries for a soft custard-like texture.
2 cups Greek yogurt
4 large eggs
1/4 cup maple syrup or honey
1 tsp vanilla extract
3 tbsp cornstarch
1½ cups berries, divided
Preheat the oven to 350°F (175°C). Line an 8×8-inch baking dish with parchment paper and set aside.
In a large mixing bowl, whisk together the Greek yogurt, eggs, maple syrup, and vanilla extract until smooth.
Add the cornstarch and whisk again until fully incorporated and lump-free.
Fold in 1 cup of the berries with a few gentle stirs.
Pour the mixture into the prepared baking dish and sprinkle the remaining 1/2 cup of berries over the top.
Bake for 45 minutes or until the center is fully set and no longer jiggly.
Remove from the oven and allow the baked yogurt to cool almost completely.
Slice into 9 squares and serve as is or drizzle with extra maple syrup if desired.
Fresh or frozen berries both work well in this recipe.
Let the baked yogurt cool before slicing for cleaner pieces.
Store leftovers in the refrigerator for up to 4 days.
Delicious served chilled, at room temperature, or slightly warmed.
