Ingredients

1 lb lean ground beef
1 oz packet taco seasoning
1/2 cup water
6 large flour tortillas
16 oz shredded Mexican cheese blend
1/2 cup pico de gallo salsa

Instructions

Brown the Beef:
In a large skillet over medium heat, cook the ground beef until browned. Drain excess fat and return beef to the pan.
Season the Beef:
Add taco seasoning and water. Break the meat into fine crumbles and mix well.
Simmer:
Bring to a gentle boil, then reduce heat and simmer for 5–10 minutes until thick and saucy. Remove from heat.
Soften Tortillas:
Wrap tortillas in a damp paper towel and microwave for 15–20 seconds until soft and pliable.
Assemble Meximelts:
Add seasoned beef, shredded cheese, and pico de gallo to each tortilla. Fold in the sides and roll tightly like a burrito.
Melt & Steam:
Wrap each meximelt in a damp paper towel and microwave for about 15 seconds until cheese is melted and tortillas are soft.
Serve:
Serve hot and enjoy immediately.

Notes

Use freshly shredded cheese for better melting.
Add jalapeños for extra heat.
Swap ground beef for chicken or turkey if desired.
Serve with sour cream, guacamole, or extra salsa.
