Ingredients

  • 6 cups mixed greens (arugula, spinach, or baby kale)
  • 1/2 cup pomegranate seeds
  • 2 medium pears or apples, thinly sliced
  • 1/2 cup crumbled goat cheese or feta
  • 1/2 cup toasted walnuts or pecans
  • 1/4 cup dried cranberries
  • 1/4 small red onion, thinly sliced

For the Dressing:

  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar or apple cider vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard
  • Salt and pepper, to taste

Instructions

  1. Wash and dry the mixed greens thoroughly.
  2. In a large salad bowl, arrange the greens as the base.
  3. Top with pomegranate seeds, pear or apple slices, goat cheese, toasted nuts, dried cranberries, and red onion.
  4. In a small bowl or jar, whisk together olive oil, vinegar, honey or maple syrup, Dijon mustard, salt, and pepper until smooth.
  5. Drizzle dressing over the salad just before serving and toss gently to coat.
