Ingredients

2 tablespoons butter

4 cloves garlic, minced

3 tablespoons all-purpose flour

¼ teaspoon ground black pepper

¼ teaspoon salt

¼ teaspoon dried oregano

1 cup milk

½ cup Parmesan cheese, finely grated

Instructions

Add the butter to a small saucepan over medium heat and let it melt completely (do not brown).

Stir in the minced garlic and cook for about 30 seconds until fragrant.

Whisk in the flour, salt, pepper, and oregano until smooth and well combined.

Slowly pour in the milk while whisking continuously to prevent lumps.

Continue cooking over medium heat, whisking occasionally, for about 4–5 minutes until the sauce thickens and coats the back of a spoon.

Remove from heat and stir in the grated Parmesan cheese. Mix until fully melted and smooth.

Use immediately on pizza dough, flatbread, or pasta.

Notes

The sauce thickens as it cools, making it ideal for spreading on pizza.

If it becomes too thick, whisk in a splash of warm milk to loosen.

Freshly grated Parmesan melts more smoothly than pre-shredded cheese.

Store in an airtight container in the refrigerator for up to 4 days.
