Ingredients

  • 1012 egg roll wrappers
  • 1 cup andouille sausage, diced
  • 1 cup cooked chicken breast, shredded or chopped
  • 1/2 cup red bell pepper, diced
  • 1/2 cup green bell pepper, diced
  • 1/2 cup onion, finely chopped
  • 1 cup Monterey Jack or Pepper Jack cheese, shredded
  • 1 tbsp Cajun seasoning
  • 1 tbsp olive oil or butter (for sautéing)
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Heat olive oil or butter in a pan over medium heat and sauté the onions and bell peppers until softened.
  2. Add diced andouille sausage and cooked chicken, cooking for a few minutes until heated through and flavors meld.
  3. Stir in Cajun seasoning, adjust salt and pepper to taste, then remove from heat.
  4. Once slightly cooled, mix in shredded cheese.
  5. Place 2 spoonfuls of the mixture in the center of each egg roll wrapper. Fold tightly and seal the edges with water.
  6. Heat oil in a deep skillet to 350°F. Fry egg rolls until golden brown, about 3–4 minutes per side.
  7. Remove and drain on paper towels. Serve hot with dipping sauce of choice.
