Ingredients

  • 8 chicken drumsticks
  • 1/4 cup olive oil
  • 4 garlic cloves, minced
  • 1 tbsp fresh rosemary, chopped (or 1 tsp dried)
  • 1 tbsp fresh thyme leaves (or 1 tsp dried)
  • Zest and juice of 1 lemon
  • Salt and pepper, to taste
  • 1 lb baby potatoes, halved
  • 1 cup baby carrots or sliced carrots
  • 1 bell pepper, chopped
  • 1 red onion, cut into wedges
  • Optional: 1/2 cup cherry tomatoes
  • Optional: 1 zucchini, sliced

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, whisk together olive oil, minced garlic, rosemary, thyme, lemon zest and juice, salt, and pepper.
  3. Place drumsticks in a large bowl and toss with half of the marinade to coat.
  4. Arrange drumsticks on one side of a large baking sheet or roasting pan.
  5. Toss potatoes, carrots, bell pepper, and onion with the remaining marinade, then spread on the other side of the pan.
  6. Roast for 35–40 minutes, flipping drumsticks and stirring veggies halfway through, until chicken reaches 165°F (74°C) and veggies are tender.
  7. If using, add cherry tomatoes and zucchini during the last 10 minutes of roasting.
  8. Remove from oven and let rest for 5 minutes. Finish with extra lemon juice or herbs if desired before serving.

Notes

  • Flip drumsticks halfway for even browning.
  • Marinate drumsticks up to 8 hours in advance for deeper flavor.
  • Swap veggies based on preference—Brussels sprouts, sweet potatoes, or cauliflower all work well.
  • Chicken thighs can be used in place of drumsticks—same cook time applies.
  • Use Italian seasoning as a substitute for fresh herbs if needed.
