Ingredients

  • 2 boneless, skinless chicken breasts or thighs
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • 3 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 2 tbsp butter
  • 1 cup freshly grated Parmesan cheese
  • 12 oz fettuccine or pasta of choice
  • 3 cups fresh broccoli florets
  • Optional: red pepper flakes or Italian seasoning

Instructions

  1. Season chicken with salt and pepper.
  2. Heat olive oil in a skillet over medium-high heat and sear chicken until golden brown and cooked through. Slice and set aside.
  3. Cook pasta according to package directions. Add broccoli to the boiling water in the last 2–3 minutes. Drain both together and set aside.
  4. In the same skillet, melt butter and sauté minced garlic until fragrant.
  5. Pour in heavy cream and bring to a gentle simmer.
  6. Stir in grated Parmesan cheese until smooth and creamy. Season with salt, pepper, and optional red pepper flakes or Italian seasoning.
  7. Return cooked pasta and broccoli to the skillet, tossing to coat evenly in the sauce.
  8. Add sliced chicken back into the skillet and toss to combine.
  9. Serve hot, garnished with extra Parmesan if desired.

Notes

  • Use rotisserie chicken for a time-saving shortcut.
  • Add mushrooms or spinach for extra veggies.
  • Half-and-half can be substituted for heavy cream for a lighter version.
  • Avoid boiling the sauce after adding cheese to prevent separation.
