Ingredients

  • 2 cups digestive biscuits or shortbread cookies, crushed
  • 1/2 cup unsalted butter, melted
  • 24 oz cream cheese, softened
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup heavy cream or sour cream
  • 3/4 cup caramel sauce (store-bought or homemade)
  • 1 cup semi-sweet or milk chocolate chips
  • 1/2 cup heavy cream (for ganache)
  • 34 Twix bars, chopped (for garnish)

Instructions

  1. Preheat oven to 325°F (160°C). Line the bottom of a springform pan with parchment paper.
  2. Mix crushed cookies with melted butter and press into the pan to form the crust. Bake for 10 minutes and cool.
  3. In a bowl, beat cream cheese until smooth. Add sugar, eggs, vanilla, and cream or sour cream, mixing until lump-free.
  4. Pour filling over crust and bake for 50–60 minutes, until center is set but slightly jiggly.
  5. Turn off oven and let cheesecake cool inside with the door ajar for 1 hour. Then chill for at least 4 hours or overnight.
  6. Spread caramel sauce over the chilled cheesecake.
  7. Heat 1/2 cup cream and pour over chocolate chips. Stir until smooth to make ganache. Pour over caramel layer.
  8. Top with chopped Twix bars and chill until ganache is set.
