Ingredients

  • 2 cups fresh strawberries, sliced
  • 1 cup crushed pineapple, drained
  • 2 cups whipped cream or whipped topping
  • 8 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 tsp vanilla extract
  • 1 package ladyfinger cookies or graham crackers
  • Optional: 1/4 cup shredded coconut
  • Optional: 1 cup tropical fruit chunks (mango or banana)

Instructions

  1. In a mixing bowl, beat cream cheese, sugar, and vanilla until smooth.
  2. Gently fold in whipped cream until well combined.
  3. Layer ladyfinger cookies or graham crackers at the bottom of a 9×13-inch dish.
  4. Spread a layer of the cream mixture over the cookies.
  5. Add a layer of sliced strawberries and crushed pineapple.
  6. Repeat layers until ingredients are used, ending with cream and strawberries on top.
  7. Sprinkle shredded coconut or tropical fruit chunks on top if desired.
  8. Cover and chill for at least 4 hours or overnight before serving.
