Ingredients

  • 1 tri tip roast (23 pounds)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Optional: 1 tsp fresh rosemary, 1/2 tsp crushed red pepper, or steak seasoning blend

Instructions

  1. Brush the tri tip with olive oil and season with salt, pepper, garlic powder, onion powder, and smoked paprika. Let it sit at room temperature for 30–45 minutes.
  2. For Grilled Tri Tip: Preheat grill to medium-high heat. Sear over direct heat for 5–6 minutes per side. Move to indirect heat, cover, and cook for 20–30 minutes until internal temp reaches 130–135°F for medium-rare. Let rest for 10 minutes, then slice thinly against the grain.
  3. For Oven-Roasted Tri Tip: Preheat oven to 425°F (220°C). Sear tri tip in an oven-safe skillet over medium-high heat for 3–4 minutes per side. Transfer skillet to oven and roast 20–25 minutes until internal temp is 130–135°F. Let rest 10 minutes before slicing against the grain.
