Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 tbsp instant espresso powder (or 2 tbsp strong brewed espresso)
  • 1 tbsp coffee liqueur (optional)
  • 8 oz mascarpone cheese
  • 1/2 cup powdered sugar
  • 23 tbsp heavy cream
  • 1/2 tsp espresso powder (for frosting)
  • Unsweetened cocoa powder, for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Whisk together flour, baking powder, and salt in a bowl.
  3. Cream butter with granulated and brown sugar in a separate bowl until light and fluffy.
  4. Beat in egg, vanilla extract, espresso powder, and coffee liqueur if using.
  5. Gradually add the dry ingredients to the wet, mixing until just combined.
  6. Scoop dough onto baking sheets and bake for 10–12 minutes, until edges are set.
  7. Cool cookies completely on a wire rack.
  8. Prepare frosting by beating mascarpone with powdered sugar, heavy cream, and espresso powder until smooth and fluffy.
  9. Frost cooled cookies and dust lightly with cocoa powder before serving.
