Ingredients

  • 1.5 lbs ground beef
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 bell peppers, chopped
  • 1 (28 oz) can diced tomatoes
  • 2 tbsp tomato paste
  • 1 (15 oz) can kidney beans, drained and rinsed
  • 1 (15 oz) can black beans, drained and rinsed
  • 1 cup beef broth
  • 2 tbsp olive oil
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp dried oregano
  • Salt and pepper, to taste
  • 1/4 tsp cayenne pepper (optional)
  • 1 tsp sugar (optional, to balance acidity)

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions and bell peppers until softened, about 5 minutes.
  2. Add garlic and cook for 30 seconds until fragrant.
  3. Add ground beef and cook until browned, breaking it apart with a spoon.
  4. Stir in chili powder, cumin, paprika, oregano, salt, pepper, and cayenne if using. Cook for 1 minute.
  5. Add tomato paste, diced tomatoes, kidney beans, black beans, and beef broth. Stir to combine.
  6. Bring to a simmer, cover partially, and cook on low for 30–45 minutes, stirring occasionally.
  7. Taste and adjust seasoning. Add sugar if the tomatoes are too acidic.
  8. Serve hot with desired toppings like shredded cheese, sour cream, and green onions.

  • Substitute ground beef with turkey, chicken, or plant-based meat.
  • Leave out beans for a bean-free version and add more meat or veggies.
