Ingredients

2 slices of bread (sourdough or whole wheat recommended)

1 tablespoon butter (for spreading)

¼ teaspoon ground cumin

¼ teaspoon chili powder

¼ teaspoon garlic powder

¼ cup shredded cheddar cheese

¼ cup shredded pepper jack cheese

23 slices of jalapeños (fresh or pickled)

Salt and pepper, to taste

Instructions

Preheat a skillet or griddle over medium heat.

In a small bowl, mix together the butter, cumin, chili powder, garlic powder, salt, and pepper to create a spiced butter.

Spread the spiced butter generously on one side of each slice of bread.

Place one slice of bread, buttered side down, onto the skillet. Layer with cheddar and pepper jack cheese, followed by the sliced jalapeños.

Top with the second slice of bread, buttered side up, and press gently to help the sandwich stick together.

Grill the sandwich for 3-4 minutes on each side, until the bread is golden brown and the cheese is melted.

Once done, remove from the skillet and let it cool for a minute before slicing. Serve immediately.
