Ingredients

  • 1 lb flank steak or sirloin, thinly sliced
  • 3 cups cooked white or jasmine rice
  • 1 cup pineapple chunks (canned or fresh)
  • 1 bell pepper, sliced
  • 1/2 cup carrots, julienned or shredded
  • 2 green onions, chopped
  • 1/4 cup soy sauce
  • 2 tbsp brown sugar
  • 2 cloves garlic, minced
  • 1 tsp fresh ginger, grated
  • 1 tbsp cornstarch
  • 1/4 cup water
  • 1 tsp sesame oil
  • 1 tbsp vegetable oil
  • Sesame seeds (optional, for garnish)

Instructions

  1. Cook rice according to package directions and keep warm.
  2. In a small bowl, whisk together soy sauce, brown sugar, garlic, ginger, cornstarch, water, and sesame oil to make the teriyaki sauce.
  3. Heat vegetable oil in a skillet or wok over medium-high heat. Add sliced beef and cook until browned and cooked through. Remove and set aside.
  4. In the same pan, stir-fry bell peppers and carrots for 2–3 minutes until just tender.
  5. Return beef to the pan and pour in the teriyaki sauce. Cook for 2–3 minutes, stirring until the sauce thickens and coats the meat and veggies.
  6. Stir in pineapple chunks and cook for 1–2 minutes to warm through.
  7. Serve over rice, topped with green onions and sesame seeds if desired.
