Ingredients
1 (32 oz) bag frozen tater tots
1/2 lb breakfast sausage (pork or turkey)
2 tbsp all-purpose flour
2 cups milk
1 tbsp butter (optional)
Salt and black pepper to taste
4 eggs (fried, scrambled, or poached)
1/2 cup shredded cheddar cheese (optional)
2 tbsp chopped green onions or chives (optional)
Instructions
Preheat oven and bake tater tots according to package directions until golden and crispy.
In a skillet over medium heat, brown the sausage until fully cooked, breaking it into crumbles.
Sprinkle flour over sausage and stir to coat; cook for 1–2 minutes to eliminate raw flour taste.
Gradually add milk, stirring constantly; simmer until gravy thickens. Season with salt and pepper.
While the gravy simmers, cook the eggs to your preference (fried, scrambled, or poached).
To serve, place a layer of hot tater tots in a bowl, top with sausage gravy, and add cooked eggs.
Garnish with shredded cheese and chopped green onions if desired. Serve immediately.
Notes
Use hash browns or breakfast potatoes as an alternative to tater tots.
Sausage gravy can be made ahead and reheated with a splash of milk.
For a vegetarian version, use plant-based sausage and omit eggs or use egg alternatives.
Wait to add gravy until serving to maintain tater tot crispiness.
