Ingredients

  • 1 (32 oz) bag frozen tater tots
  • 1/2 lb breakfast sausage (pork or turkey)
  • 2 tbsp all-purpose flour
  • 2 cups milk
  • 1 tbsp butter (optional)
  • Salt and black pepper to taste
  • 4 eggs (fried, scrambled, or poached)
  • 1/2 cup shredded cheddar cheese (optional)
  • 2 tbsp chopped green onions or chives (optional)

Instructions

  1. Preheat oven and bake tater tots according to package directions until golden and crispy.
  2. In a skillet over medium heat, brown the sausage until fully cooked, breaking it into crumbles.
  3. Sprinkle flour over sausage and stir to coat; cook for 1–2 minutes to eliminate raw flour taste.
  4. Gradually add milk, stirring constantly; simmer until gravy thickens. Season with salt and pepper.
  5. While the gravy simmers, cook the eggs to your preference (fried, scrambled, or poached).
  6. To serve, place a layer of hot tater tots in a bowl, top with sausage gravy, and add cooked eggs.
  7. Garnish with shredded cheese and chopped green onions if desired. Serve immediately.

Notes

  • Use hash browns or breakfast potatoes as an alternative to tater tots.
  • Sausage gravy can be made ahead and reheated with a splash of milk.
  • For a vegetarian version, use plant-based sausage and omit eggs or use egg alternatives.
  • Wait to add gravy until serving to maintain tater tot crispiness.
