Ingredients

  • 1.5 lbs boneless chicken, beef, or pork (cut into cubes)
  • 1 red bell pepper (cut into chunks)
  • 1 yellow bell pepper (cut into chunks)
  • 1 green bell pepper (cut into chunks)
  • 1 red onion (cut into chunks)
  • 1 zucchini or 1 cup cherry tomatoes
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder or 2 cloves minced garlic
  • 1/2 cup barbecue sauce (your favorite kind)
  • Skewers (wooden or metal)

Instructions

  1. Soak wooden skewers in water for at least 30 minutes if using wooden ones.
  2. Cut meat and vegetables into even-sized pieces.
  3. In a large bowl, toss meat and vegetables with olive oil, salt, pepper, and garlic powder until well coated.
  4. Thread meat and vegetables onto skewers, alternating items for color and texture variety.
  5. Preheat grill to medium-high heat.
  6. Grill skewers for 10–15 minutes, turning occasionally until meat is cooked through and slightly charred.
  7. In the last few minutes of grilling, brush skewers with barbecue sauce and allow to caramelize.

Notes

  • Use metal skewers or soak wooden ones to prevent burning.
  • Marinate meat beforehand for deeper flavor.
  • For a vegetarian version, use mushrooms, tofu, or halloumi cheese.
  • Add pineapple chunks for a sweet contrast.
