Ingredients

  • 24 salmon fillets (skin-on or skinless, center-cut)
  • 2 cups fresh spinach
  • 1/2 cup feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt, to taste
  • Black pepper, to taste
  • 1/2 tsp dried oregano or Italian seasoning
  • Optional: 2 tbsp cream cheese or ricotta for creamier filling

Instructions

  1. Preheat oven to 375°F (190°C). Line a baking dish with parchment paper or lightly oil it.
  2. Heat olive oil in a skillet over medium heat. Sauté garlic for 30 seconds.
  3. Add spinach and cook until wilted. Remove from heat and let cool slightly.
  4. Mix spinach with crumbled feta and lemon juice. Add cream cheese or ricotta if using.
  5. Cut a horizontal slit into each salmon fillet to create a pocket.
  6. Stuff each fillet with the spinach-feta mixture. Season salmon with salt, pepper, and oregano.
  7. Place stuffed salmon in the baking dish. Drizzle with olive oil or lemon juice.
  8. Bake for 15–18 minutes, until salmon flakes easily with a fork and filling is heated through.
