Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 2 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • 1/2 cup milk
  • 1 tsp vanilla extract
  • 1/2 cup fresh strawberries, finely chopped
  • For the frosting:
  • 1/2 cup unsalted butter, softened
  • 2 1/2 cups powdered sugar
  • 1 tbsp lemon juice
  • 2 tbsp strawberry puree or 2 tsp freeze-dried strawberry powder
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions

  1. Preheat the oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream the butter and sugar until light and fluffy.
  4. Add eggs one at a time, then mix in lemon juice, lemon zest, and vanilla extract.
  5. Alternate adding flour mixture and milk to the wet ingredients, mixing just until combined.
  6. Gently fold in the chopped strawberries.
  7. Divide the batter evenly among cupcake liners and bake for 18–22 minutes, or until a toothpick comes out clean.
  8. Let cupcakes cool completely before frosting.
  9. To make the frosting: Beat the butter until smooth. Gradually add powdered sugar, then mix in lemon juice, strawberry puree or powder, vanilla extract, and a pinch of salt. Beat until fluffy.
  10. Pipe or spread the frosting onto the cooled cupcakes and garnish if desired.
