Ingredients

  • 1 3/4 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2 large eggs
  • 3/4 cup sugar
  • 1/2 cup vegetable oil or melted butter
  • 1 tsp vanilla extract
  • 1/2 cup milk or yogurt
  • 1 1/2 cups fresh or frozen strawberries, diced
  • 1 tbsp flour (for tossing strawberries)
  • Optional: 1 tsp lemon zest or 1/2 tsp cinnamon

Instructions

  1. Preheat oven to 350°F (175°C). Grease or line a standard loaf pan with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt (plus lemon zest or cinnamon if using).
  3. In a large bowl, beat eggs and sugar until light and creamy. Add oil, milk or yogurt, and vanilla extract; mix well.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Toss diced strawberries with 1 tbsp flour and gently fold them into the batter.
  6. Pour batter into prepared pan and smooth the top.
  7. Bake for 50–60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Cool in the pan for 10–15 minutes, then transfer to a wire rack to cool completely before slicing.

  • Top cooled loaf with powdered sugar glaze for extra sweetness.
  • Mix in chopped nuts like walnuts or pecans for added crunch.
