Ingredients

    • For the Beef & Marinade:
    • 1 lb flank steak or sirloin, thinly sliced against the grain
    • 1 tbsp soy sauce
    • 1 tbsp cornstarch
    • 1 tsp sesame oil

    • For the Sauce:
    • 3 tbsp soy sauce
    • 2 tbsp oyster sauce
    • 2 tbsp hoisin sauce
    • 1 tbsp brown sugar or honey
    • 1 tsp rice vinegar
    • 2 garlic cloves, minced
    • 1 tsp grated fresh ginger
    • ½ tsp chili flakes (optional)

  • For the Noodles & Stir-Fry:
  • 8 oz egg noodles or rice noodles
  • 2 tbsp vegetable oil
  • 1 bell pepper, thinly sliced
  • 1 small carrot, julienned
  • 2 green onions, chopped
  • Sesame seeds (for garnish)

Instructions

  1. Marinate beef with soy sauce, cornstarch, and sesame oil for at least 15 minutes.
  2. Whisk together sauce ingredients in a small bowl and set aside.
  3. Cook noodles according to package instructions, then drain and rinse under cold water.
  4. Heat 1 tbsp oil in a wok or skillet over high heat. Sear beef until browned and just cooked through, then remove from pan.
  5. Add remaining oil, then stir-fry bell pepper and carrot for 2–3 minutes until tender-crisp.
  6. Return beef to the pan along with noodles. Pour in the sauce and toss everything together over medium-high heat until glossy and coated, about 2 minutes.
  7. Finish with green onions and sesame seeds. Serve hot.

Notes

  • Add broccoli, mushrooms, or snap peas for extra vegetables.
  • Swap beef for chicken, shrimp, or tofu as a variation.
  • Use rice noodles, lo mein, or udon if egg noodles aren’t available.
  • For more spice, stir in chili garlic sauce or fresh sliced chili.
  • Sauce thickens when stored—add a splash of water or soy sauce when reheating.
