Ingredients

Noodles:

2 packs Samyang Carbo noodles (or your favorite spicy instant noodles)

Korean Corn Cheese:

1½ cups frozen or canned corn (drained if canned)

1 cup grated white cheddar

½ cup grated mozzarella

1 tablespoon Japanese mayonnaise

1 teaspoon sugar

Instructions

Cook the instant noodles according to package instructions. Drain if required and transfer to serving plates.

In a pan over high heat, add corn, white cheddar, mozzarella, Japanese mayo, and sugar.

Once the mixture begins to sizzle, reduce heat to medium.

Stir occasionally until the cheese is fully melted and creamy.

Turn off heat and let sit for 2–3 minutes to thicken slightly.

Spoon or pour the hot corn cheese over the spicy noodles.

Garnish with dried parsley (optional) and serve immediately.

Notes

You can use either white cheddar, mozzarella, or any good melting cheese you have on hand.

Adjust sweetness by adding more or less sugar to taste.

For extra heat, sprinkle chili flakes on top.

Add a soft-boiled egg for extra richness and protein.
