Ingredients

  • 1.52 lbs boneless, skinless chicken thighs or breasts
  • 23 chipotle peppers in adobo sauce
  • 2 garlic cloves
  • 2 tbsp lime juice
  • 2 tbsp olive oil
  • 1 tbsp honey
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Salt and black pepper to taste

For the Chipotle Dipping Sauce:

  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 chipotle pepper in adobo, finely chopped
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • Salt to taste

Instructions

  1. Blend chipotle peppers, garlic, lime juice, olive oil, honey, cumin, paprika, salt, and pepper until smooth.
  2. Pour marinade over chicken in a bowl or zip-top bag. Refrigerate for at least 1 hour, or up to overnight.
  3. Mix all dipping sauce ingredients in a small bowl. Adjust spice as desired and refrigerate until ready to serve.
  4. Preheat grill to medium-high heat and oil the grates.
  5. Grill chicken 6–7 minutes per side or until charred and cooked through.
  6. Let chicken rest for a few minutes, then slice and serve with the dipping sauce.

  • Use chicken breasts or thighs based on preference—pound breasts for even cooking.
  • Cook in a skillet or bake at 400°F for 20–25 minutes if no grill is available.
