Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 2 chipotle peppers in adobo sauce
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tbsp lime juice
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • For the chipotle dipping sauce:
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream or Greek yogurt
  • 1 chipotle pepper in adobo sauce
  • 1 tbsp lime juice
  • 1/2 tsp garlic powder
  • Pinch of salt

Instructions

  1. Blend marinade ingredients: chipotle peppers, olive oil, garlic, lime juice, paprika, cumin, salt, and pepper.
  2. Coat chicken in marinade and refrigerate for at least 30 minutes (up to overnight).
  3. Meanwhile, mix all dipping sauce ingredients until smooth. Chill until ready to serve.
  4. Preheat grill or grill pan to medium-high heat and oil grates.
  5. Grill chicken 5–6 minutes per side until fully cooked and charred.
  6. Rest chicken for 5 minutes, then slice and serve with chipotle dipping sauce.
