Ingredients
2 lbs beef stew meat or chuck roast, cut into bite-sized pieces
1.5 lbs baby potatoes, halved or quartered
4 cloves garlic, minced
1/2 cup butter
1 tbsp olive oil
1 tsp onion powder
1/2 tsp dried thyme
1/2 tsp dried rosemary
1 tsp salt
1/2 tsp black pepper
Fresh parsley, chopped (optional, for garnish)
Instructions
Heat olive oil in a skillet over medium-high heat and sear beef bites until browned (optional step).
Transfer seared beef to the slow cooker.
Add halved baby potatoes on top of the beef.
In a small saucepan or microwave-safe bowl, melt butter and stir in minced garlic, onion powder, thyme, rosemary, salt, and pepper.
Pour the garlic butter mixture evenly over the beef and potatoes.
Cover and cook on low for 6–8 hours or high for 3–4 hours, until beef is tender and potatoes are soft.
Stir gently before serving and garnish with fresh parsley if desired.
Notes
Optional to skip searing the beef if short on time.
Add carrots, green beans, or sweet potatoes for variety.
Red pepper flakes can be added for a bit of heat.
Stir in cream or cream cheese at the end for a richer sauce.
Store leftovers in the fridge for up to 4 days or freeze in individual portions.
