Ingredients

  • 4 boneless, skinless chicken breasts or thighs
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 (14.5 oz) can diced tomatoes (or 1 1/2 cups marinara sauce)
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Optional: 1/4 tsp red pepper flakes
  • 2 tbsp chopped fresh basil or parsley

Instructions

  1. Season chicken with Italian seasoning, garlic powder, onion powder, salt, and pepper.
  2. Place diced tomatoes and chicken broth in the slow cooker. Add red pepper flakes if using.
  3. Nestle the seasoned chicken into the tomato mixture.
  4. Cook on low for 4–5 hours or on high for 2–3 hours, until chicken is tender.
  5. Remove chicken, shred with two forks, and return to slow cooker. Stir into sauce.
  6. Top with mozzarella and Parmesan. Cover and cook an additional 10–15 minutes until cheese melts.
  7. Garnish with fresh basil or parsley before serving. Serve warm.
