Ingredients

2 pounds beef chuck roast

1 cup balsamic vinegar

1/2 cup brown sugar

1/4 cup soy sauce

1 tablespoon Dijon mustard

4 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1 teaspoon onion powder

1 teaspoon dried thyme

1 tablespoon olive oil

1 medium onion, sliced

2 carrots, chopped

2 stalks celery, chopped

Instructions

In a small bowl, whisk together balsamic vinegar, brown sugar, soy sauce, Dijon mustard, garlic, salt, pepper, onion powder, and thyme.

Heat olive oil in a skillet over medium-high heat. Sear beef roast on all sides (3–4 minutes per side).

Layer onion, carrots, and celery at the bottom of the slow cooker.

Place the seared roast on top of the vegetables.

Pour the balsamic mixture over the roast.

Cover and cook on low for 8 hours or on high for 4 hours.

Remove the roast, let it rest, then slice or shred.

Serve with vegetables and sauce from the slow cooker.

Notes

Add an extra tablespoon of brown sugar for a sweeter sauce.

Best served over mashed potatoes or rice.

Can be prepped the night before for easier mornings.
