Ingredients

  • 1 lb steak (sirloin or ribeye, cut into bite-sized pieces)
  • 2 medium potatoes (russet or Yukon Gold, diced small)
  • 1 onion, diced
  • 1 bell pepper (any color), chopped
  • 2 garlic cloves, minced
  • 2 tbsp olive oil or butter
  • Salt, to taste
  • Black pepper, to taste
  • 1 tsp smoked paprika (optional)
  • Fresh herbs (parsley or chives), chopped
  • 2 eggs (one per serving)

Instructions

  1. Pat the steak pieces dry and season them with salt, pepper, and a pinch of smoked paprika.
  2. Heat oil in a large skillet over medium-high heat, then sear the steak in batches until browned but still slightly pink inside. Remove the steak and set aside.
  3. In the same skillet, add more oil and toss in the diced potatoes. Cook, stirring occasionally, until the potatoes develop a golden crust.
  4. Once the potatoes are almost done, push them to one side of the skillet and add the onions and peppers. Sauté until softened, then stir them into the potatoes.
  5. Return the steak to the skillet along with minced garlic. Cook for another minute, just until the garlic is fragrant and everything is heated through.
  6. Taste and adjust seasoning with more salt, pepper, or smoked paprika as needed.
  7. Make small wells in the hash and crack an egg into each well. Cover the skillet and cook for a few minutes until the egg whites are set but the yolks are still gooey.
  8. Sprinkle fresh herbs over the top and serve directly from the pan.
