  • 2 lbs red potatoes, washed and quartered
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried rosemary or thyme
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Optional: fresh parsley or grated Parmesan for garnish

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper or foil.
  2. In a large bowl, toss potatoes with olive oil, garlic powder, onion powder, rosemary, salt, and pepper until evenly coated.
  3. Spread potatoes on the prepared baking sheet in a single layer, cut side down for crispness.
  4. Roast for 30–35 minutes, flipping halfway through, until golden brown and tender.
  5. Garnish with fresh parsley or Parmesan if desired. Serve hot.

Notes

  • No need to peel red potatoes—just scrub them clean.
  • For extra crispiness, preheat the baking sheet before adding potatoes.
  • Mix with Yukon gold potatoes for variety in color and texture.
  • Add lemon zest or fresh herbs after roasting for a bright finish.
