Ingredients

  • 1 ball pizza dough (homemade or store-bought)
  • 1 cooked chicken breast, shredded or diced
  • 1 whole garlic bulb
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 cup whole milk or heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 tsp Italian seasoning or dried oregano
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional for garnish)

Instructions

  1. Preheat oven to 400°F (200°C). Slice top off garlic bulb, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until golden and soft.
  2. Meanwhile, melt butter in a saucepan over medium heat. Whisk in flour to form a roux.
  3. Gradually whisk in milk or cream until smooth and thickened.
  4. Stir in Parmesan, salt, pepper, and Italian seasoning.
  5. Squeeze roasted garlic cloves from their skins, mash, and stir into the sauce.
  6. Increase oven temperature to 475°F (245°C).
  7. Roll out pizza dough and place on a baking sheet or pizza stone.
  8. Spread white garlic sauce over dough. Top with shredded chicken and mozzarella.
  9. Bake for 10–14 minutes until crust is golden and cheese is bubbling.
  10. Garnish with fresh parsley or extra Parmesan before serving.

Notes

  • Use rotisserie chicken for a quick shortcut.
  • Add sautéed spinach, mushrooms, or caramelized onions for variety.
  • Store-bought roasted garlic or alfredo sauce can be used in a pinch.
  • Low-moisture mozzarella helps prevent soggy crust.
  • Leftovers reheat best in a skillet or oven for a crisp crust.
