Ingredients

  • For the crust:
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • For the raspberry lemonade filling:
  • 1 cup fresh or frozen raspberries (thawed and drained if frozen)
  • 1 cup granulated sugar
  • 1/2 cup freshly squeezed lemon juice
  • 1 tbsp lemon zest
  • 3 large eggs
  • 1/3 cup all-purpose flour
  • 1/4 tsp salt
  • Optional: powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. To make the crust, mix flour, sugar, and salt in a bowl. Cut in cold butter until mixture resembles coarse crumbs.
  3. Press crust into the bottom of the pan and bake for 15–18 minutes, until lightly golden.
  4. While crust bakes, puree raspberries in a blender or food processor, then strain to remove seeds.
  5. In a separate bowl, whisk together sugar, eggs, lemon juice, lemon zest, flour, salt, and strained raspberry puree until smooth.
  6. Pour raspberry lemon mixture over the hot crust immediately after removing from oven.
  7. Return pan to oven and bake for 20–25 minutes, until filling is set and slightly firm to the touch.
  8. Let bars cool completely, then chill in the fridge for at least 2 hours.
  9. Dust with powdered sugar before slicing and serving.
