Ingredients

  • 2 cups mashed potatoes (cold or room temperature)
  • 1 cup shredded mozzarella or cheddar cheese
  • Salt and pepper, to taste
  • 1/2 tsp garlic powder (optional)
  • 2 tbsp chopped parsley or green onions (optional)
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs (plain or seasoned)
  • Oil for frying

Instructions

  1. Mix mashed potatoes, cheese, salt, pepper, garlic powder, and herbs until well combined.
  2. Shape into sticks about 3 inches long and 1/2 inch thick.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs.
  4. Coat each stick in flour, dip in egg, then coat with breadcrumbs.
  5. Place on a tray and refrigerate for at least 30 minutes.
  6. Heat oil to 350°F (175°C) in a frying pan or deep fryer.
  7. Fry sticks in batches for 2–3 minutes per side until golden brown.
  8. Drain on paper towels and serve warm with dipping sauce.
