Ingredients

  • 2 fresh pears, thinly sliced (Bartlett or Anjou)
  • 5 cups mixed greens (arugula, spinach, or spring mix)
  • 1/3 cup crumbled blue cheese, goat cheese, or feta
  • 1/3 cup toasted walnuts or pecans
  • 2 tbsp thinly sliced red onion (optional)
  • 2 tbsp dried cranberries (optional)

Vinaigrette:

  • 1/4 cup olive oil
  • 2 tbsp apple cider vinegar or balsamic vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard
  • Salt and black pepper, to taste

Instructions

  1. Whisk vinaigrette ingredients together in a small bowl until well combined.
  2. In a large salad bowl, toss mixed greens with just enough vinaigrette to lightly coat.
  3. Arrange pear slices on top, then sprinkle with cheese, nuts, red onion, and cranberries (if using).
  4. Drizzle with remaining vinaigrette just before serving.

Notes

  • Toss sliced pears in lemon juice to prevent browning if prepping ahead.
  • For a heartier salad, add grilled chicken or roasted butternut squash.
  • Candied nuts or pomegranate seeds make excellent seasonal additions.
