Ingredients

  • 2 ¾ cups all-purpose flour
  • 1 ½ tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup unsalted butter, softened
  • 1 cup creamy peanut butter
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • Extra granulated sugar (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, baking powder, and salt.
  3. In a large bowl, beat butter, peanut butter, granulated sugar, and brown sugar until smooth and creamy.
  4. Add eggs one at a time, mixing well after each, then mix in vanilla extract.
  5. Gradually stir dry ingredients into wet ingredients until fully incorporated.
  6. Scoop tablespoon-sized portions of dough, roll into balls, and coat in granulated sugar.
  7. Place on prepared baking sheets about 2 inches apart and gently flatten slightly.
  8. Bake for 9–11 minutes until edges are golden and centers are set.
  9. Cool on baking sheet for 2–3 minutes, then transfer to a wire rack to cool completely.
