Ingredients

  • 12 oz short pasta (penne, fusilli, or gnocchi)
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 can (28 oz) whole peeled tomatoes or 2 cups tomato passata
  • Salt and pepper, to taste
  • 1/2 tsp red pepper flakes (optional)
  • 1/2 tsp sugar (optional)
  • Fresh basil leaves, torn
  • 8 oz fresh mozzarella, cubed or torn
  • 1/2 cup grated Parmigiano-Reggiano or pecorino

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cook pasta in salted water until just al dente. Drain and set aside.
  3. Heat olive oil in a skillet, sauté garlic until fragrant.
  4. Add tomatoes, crush gently, and simmer for 15–20 minutes. Season with salt, pepper, basil, and optional red pepper flakes or sugar.
  5. Stir in cooked pasta, half the mozzarella, and some grated cheese.
  6. Transfer mixture to a baking dish. Top with remaining mozzarella and more grated cheese.
  7. Bake for 15–20 minutes until golden and bubbling.
  8. Let rest for a few minutes. Garnish with fresh basil and serve warm.
