Ingredients

  • 8 breakfast sausage links or patties (cooked and cut into bite-sized pieces)
  • 2 cups pancake mix
  • 1 1/2 cups water or milk (or as package directs)
  • 1 egg (if required by mix)
  • 1 tbsp maple syrup (optional, for added flavor)
  • Butter or nonstick spray (for greasing the pan)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a mini muffin tin with butter or nonstick spray.
  2. Cook sausage links or patties and cut them into small chunks.
  3. In a bowl, mix pancake batter according to package instructions. Stir in maple syrup if using.
  4. Spoon a small amount of batter into each muffin cup, filling about halfway.
  5. Place a sausage piece in the center of each cup and press gently.
  6. Bake for 12–15 minutes, or until bites are puffed and golden.
  7. Let cool slightly, remove from pan, and serve warm with maple syrup for dipping.
