Ingredients

  • 46 bone-in, skin-on chicken thighs or one whole cut-up chicken
  • 20+ garlic cloves, peeled
  • 3 tbsp olive oil
  • 2 tsp fresh rosemary, thyme, or herbes de Provence
  • 1/2 cup white wine or chicken broth
  • Salt and black pepper to taste
  • 1 tbsp lemon juice (optional)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Scatter garlic cloves in a baking dish or Dutch oven.
  3. Season chicken with salt, pepper, and herbs, then place over garlic.
  4. Drizzle olive oil over everything and add white wine or broth to the dish.
  5. Cover with foil or a lid and roast for 45 minutes.
  6. Uncover and roast for another 15–20 minutes until skin is crispy and garlic caramelized.
  7. Optional: Squeeze lemon juice over chicken before serving for added brightness.
