Ingredients

  • 46 bone-in, skin-on chicken thighs
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1 tsp dried thyme or rosemary
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Pat chicken thighs dry with paper towels.
  3. In a small bowl, mix olive oil with garlic powder, onion powder, paprika, thyme, salt, and pepper.
  4. Rub the seasoning mixture all over the chicken, including under the skin where possible.
  5. Place chicken thighs skin-side up on a foil- or parchment-lined baking sheet or dish.
  6. Bake for 35–45 minutes, until skin is crispy and internal temperature reaches 165°F (74°C).
  7. Let rest for a few minutes before serving.
