Rich, buttery, and irresistibly gooey—these classic bars are soft in the center with a sweet cream cheese layer on top of a cake mix crust.
1 box yellow cake mix (dry, not prepared)
2 sticks (1 cup) butter, melted
1 egg
8 oz cream cheese, softened
2 eggs, beaten
3 1/2 cups powdered sugar
Preheat Oven: Preheat oven to 350°F (175°C).
Make Crust: In a medium bowl, combine dry cake mix, melted butter, and 1 egg. Mix until a thick, sticky dough forms.
Prepare Pan: Grease a 9×13-inch baking dish with butter or non-stick spray.
Form Base: Press the dough evenly into the bottom of the pan to create a solid crust.
Prepare Filling: In a large bowl, beat cream cheese until smooth. Add 2 beaten eggs and mix until combined. Gradually add powdered sugar, mixing until the filling is thick and creamy.
Assemble: Pour the cream cheese filling over the crust. Spread evenly with a spatula.
Bake: Bake for 25–30 minutes, or until the top is slightly golden and the center is still soft and jiggly.
Cool: Cool completely on a wire rack for 1–2 hours to allow the bars to set.
Serve: Cut into squares or rectangles and serve at room temperature.
Do not overbake—center should remain gooey for that signature texture.
These bars can be made a day in advance and stored in an airtight container.
Dust with a little extra powdered sugar before serving for a pretty finish.
