Ingredients

  • 2 tablespoons olive oil
  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon dried thyme
  • ½ teaspoon paprika
  • 3 cups chicken broth
  • 1 cup heavy cream
  • 8 oz pasta (penne, rotini, or farfalle work well)
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium heat. Season chicken with salt, pepper, garlic powder, onion powder, thyme, and paprika.
  2. Add chicken to skillet and cook for 6-8 minutes, until browned and cooked through. Remove and set aside.
  3. In the same skillet, add chicken broth and bring to a simmer, scraping up any bits from the bottom of the pan.
  4. Stir in heavy cream and bring back to a simmer.
  5. Add uncooked pasta to the skillet, making sure it’s submerged in liquid. Cover and cook for 10-12 minutes, until pasta is tender and most of the liquid is absorbed.
  6. Return chicken to the skillet and stir everything together.
  7. Stir in grated Parmesan cheese until sauce becomes creamy and thickens. Add a splash of broth if the sauce is too thick.
  8. Adjust seasoning with salt and pepper, garnish with parsley, and serve hot.
